Ingredients
- 4 slices whole-grain bread
- 1/2 cup raisins or chopped dates
- 1 cup unsweetened applesauce
- 1/2 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 1/3 cup light brown sugar, packed
- 4 large egg whites
- 2 1/2 cups vanilla soymilk
- Powdered sugar (optional)
What You Need
- 8″ x 8″ x 2″ baking pan
- Cutting board
- Knife
- Blender or food processor
- Small bowl
How To Make It
- Lightly oil the baking pan.
- Cut the bread slices into 1″ cubes.
- Separate the eggs, reserving the yolks for another use.
- Blend the applesauce, cinnamon, vanilla, brown sugar, egg whites and soymilk thoroughly.
- Place bread cubes in baking pan, distributing evenly.
- Sprinkle raisins on top.
- Pour applesauce mixture evenly over the bread cubes and raisins.
- Allow the pudding to set for 10 or 15 minutes before baking.
- Bake for about 60 minutes. (Pudding should be set in the middle and lightly brown.)
- Dust with powdered sugar.
